What makes a Cava worth choosing?

It usually has very little to do with the size of the label.

The place
Vineyard, soil, altitude and climate. Penedès has many different expressions, and we want to understand where a wine begins.
The people
Small and independent producers often have the clearest point of view. We like wines that feel connected to the people who make them.
The time
Ageing matters. So does what happens before and after it. We look for Cava with balance, character and a reason to come back to the glass.
